I think the rear design is actually nice.

You can cook them any way you want, although deep fried is the most popular. Every town in the South has at least one "Fish House" serving deep fried catfish, hushpuppies, cole slaw and sliced Vidalia onion.
I've seared fillets in a skillet with cajun spices and served inside soft wheat tortillas with Tabasco spiked tarter sauce and cole slaw for a Southern fish taco variation. Another good way is pan fried with a crushed pecan crust and wild and long grain rice. You can also make a decent Southern paella with chunked catfish, gulf shrimp and andouille sausage. :eatdrink:

Interesting. Like many potential foods, it's how you cook it that matters. You can serve me an over grilled Scotch fillet prime steak and I'll :puke:. I'll give the old catfish a try, someday. Your recipe above sounds nice though!
